Ingredients:

  • 1 cup Besan (gram flour)
  • ½ cup Boora (crystalised sugar) or fine powdered sugar
  • ¼ cup Ghee
  • ¼ tsp Cardamom powder
  • Chopped nuts or raisins (optional)

Method:

  • Sift the besan.
  • Add ghee to a heavy bottom pan, let it melt on median heat.
  • Once the ghee melts, add besan to the pan. Set heat to low and keep stirring.
  • Mix the besan and the ghee together, let it clump. Keep mixing till it loosens a bit. This will take 7-8 minutes. Do not stop stirring as the besan may burn if stirring is stopped.
  • The consistency reaches that of a smooth paste, this may take 15 minutes.
  • Continue roasting on low heat for around 25 minutes, the besan will turn golden-ish in colour. ( This time may differ depending on thickness of pan, intensity of heat etc.,.
  • Remove the pan from heat, and transfer besan to a different pan, allow it to cool for 10 minutes.
  • Once the besan is lukewarm, add boora or fine powdered sugar to it.
  • Add cardamom powder. You can add the chopped nuts and raisins now too.
  • Mix everything together, until all ingredients are well combined with besan.
  • You will get a smooth besan dough, pinch small portions and roll them to form the laddu shape.

    Note: You can make 8 laddus with this recipe. Store at room temperature for upto 2 weeks.
